Echoing this colorful abundance of late summer, this month's entremet captures the spirit of the garden with an heirloom tomato compote, brightened by a sugar snap pea cream with fresh notes of mint and lime. A ricotta mousse infused with bitter orange leaves evokes the green, aromatic scent of tomato vines, while an olive oil cake rounds out the composition with a smooth, velvety finish.
