This month’s flavor feels like rainy season in Mexico City, as lush as it is verdant, everything softened by the rain. Sweet corn, at its most abundant and almost candy-like, is paired with the fragrant greenness of pandan. A light mousse infused with fresh corn and pandan leaves encases a savory-sweet shiro miso corn pudding and tangy pandan cheesecake, while brown butter corn cake and toasted coconut shortbread bring warmth and nuttiness.
